We are currently seeking a talented and motivated Chef de Partie / Junior Sous Chef to join our established kitchen team.
This is an exciting time to join the kitchen at Stobo Castle. We are continuing to strengthen our brigade and develop our food offering, with a strong focus on quality, consistency, fresh ingredients and well-presented food.
We are looking for chefs who want to be part of that development and who take genuine pride in the food they produce.
This is an excellent opportunity for an experienced Chef de Partie looking to take the next step in their career, or an existing Junior Sous Chef looking for a new challenge with the opportunity to contribute, develop and progress.
The Role
As Chef de Partie / Junior Sous Chef, you will play an important role in the day-to-day running of the kitchen and in delivering the high standards expected at Stobo Castle.
Working alongside our Executive Head Chef, Sous Chefs and wider Food & Beverage team, your responsibilities will include:
- Taking responsibility for the preparation, cooking and presentation of dishes within your section
- Ensuring consistently high standards of food quality and presentation throughout service
- Organising and completing mise en place efficiently and to the required standard
- Working with fresh, seasonal ingredients and quality Scottish produce wherever possible
- Maintaining excellent standards of food hygiene, cleanliness and kitchen organisation
- Ensuring correct food storage, labelling, stock rotation and temperature controls
- Working effectively as part of the brigade during busy breakfast, lunch and dinner services
- Supporting and developing junior members of the kitchen team
- Assisting with stock control, deliveries, portion control and minimising food waste
- Following all food hygiene, health & safety and company procedures
- Working closely with the senior kitchen team to continually improve standards
- Contributing ideas towards dishes, menus and the continued development of our food offering
- Taking additional responsibility for sections and services when required
Candidates joining us at Junior Sous Chef level will also take a greater role in supervising the kitchen team, organising preparation and service, maintaining standards across the kitchen and supporting the senior chefs with the day-to-day management of the operation.
The Kitchen & Food
Our kitchen produces food across a varied operation, giving our chefs the opportunity to gain experience across different styles of service.
The role includes working across breakfast, lunch, dinner and other food offerings, producing everything from classic dishes to more contemporary seasonal menus.
We want our chefs to understand the ingredients they are working with, care about how dishes are prepared and presented, and have the confidence to contribute their own ideas.
For chefs who want to progress, there will be opportunities to develop across different sections, increase their responsibilities and become involved in menu and dish development.
About You
The ideal candidate will be:

- Keen to learn, develop and progress within the kitchen
- Flexible and available to work a mixture of shifts, including evenings and weekends
Previous experience as a Chef de Partie, Senior Chef de Partie or Junior Sous Chef would be advantageous.
We would also be very interested in hearing from ambitious Chef de Parties who are ready to take the next step in their career and develop towards Junior Sous Chef level.
