In line with The Laundry’s philosophy, that provenance matters, we are offering a Commis Chef Apprenticeship focused on classic bistro food. This role provides comprehensive training in the preparation and cooking of entirely fresh, site-sourced ingredients across our full-service cycle, from the precision of the breakfast shift through to lunch, dinner, and our signature Sunday Roasts.
In this apprenticeship, you will develop essential preparation skills while learning the artistry of cooking in a live service setting. Beyond the technical handling of meat, fish, poultry, and seasonal vegetables, you will build a professional foundation in kitchen hygiene, safety, and organisation, gaining the discipline required to deliver high-standard menus that celebrate quality at every stage.
Entry requirements
You will need:
- GCSE English and Maths grades A-D / 3-9 (or equivalent)
- GCSE Food Tech is desirable but not essential
The ideal candidate will have:
- A passion for provenance and seasonal British/Antipodean produce
- Fundamental knife skills and manual dexterity
- Punctuality and professional reliability
- Active listening and the ability to follow technical specs
- "Clean as you go" mentality and high hygiene standards
- Physical stamina for high-volume bistro service
- Curiosity and a desire to learn the artistry of a section
- Receptiveness to feedback and a "can-do" attitude
- Team collaboration skills and can communicate under pressure
- Basic ingredient knowledge (meat, fish, and seasonal veg)
- Organisational skills for managing prep lists and college work
- Professional presentation and personal grooming
Training to be provided
There will be on-the-job training 4 days a week and also 1 day a week at our Westminster campus.
You will be trained as a Commis Chef Apprentice and in Functional Skills English and Maths at Level 1, progressing to Level 2 if applicable.
Things to consider
You will be on your feet all day in a fast-paced bistro, including early starts and late-night finishes, plus the signature weekend service. Flexibility is essential. Please maintain meticulous cleanliness and organisation at all times.
The restaurant is located in the heart of Brixton; please research your commute for both early and late shifts.
