Job Summary
We are seeking an experienced, passionate, and hands-on Senior Sous Chef to join our culinary team. The successful candidate will be responsible for leading the main course section, maintaining the highest standards of food quality, and supporting the Head Chef in the day-to-day management of the kitchen.
This is a leadership role requiring a chef who can confidently run a section independently, lead service from the front, train and develop junior team members, and consistently deliver outstanding dishes in a high-quality hotel environment.
Key Responsibilities
Lead and manage the main course section during preparation and service.
Ensure all dishes are prepared, cooked, and presented to the highest standards.
Take ownership of section performance, organisation, and cleanliness.
Work hands-on in all aspects of food preparation and service.
Support the Head Chef with daily kitchen operations and service management.
Supervise, train, and mentor junior chefs and kitchen staff.
Maintain excellent food hygiene, health & safety, and HACCP standards.
Assist with stock control, ordering, and minimising wastage.
Contribute to menu development and seasonal dish creation.
Ensure consistency, quality, and attention to detail across every service.
Help maintain a positive, professional, and team-focused kitchen culture.
Requirements
Essential
Minimum 5 years' experience in a professional kitchen.
At least 3 years' experience as a Sous Chef or Senior Chef de Partie.
Strong experience running a main course section in a busy hotel, restaurant, or fine dining environment.
Excellent cooking skills and knowledge of modern culinary techniques.
Proven ability to lead and motivate a kitchen team.
Strong organisational and communication skills.
Excellent understanding of food safety and hygiene regulations.
Ability to perform under pressure while maintaining exceptional standards.
Desirable
Experience within luxury hotels or country house hotels.
Formal culinary qualifications.
Experience working with fresh, locally sourced produce.
Knowledge of menu costing and stock management.
