The Noose & Monkey is looking for a talented and dependable Senior Chef de Partie / Sous Chef to join our kitchen team.
We're an independent Aberdeen city-centre gastropub serving quality, freshly prepared food in a relaxed environment, with a strong focus on consistency, seasonal dishes, weekly specials and popular dishes done well.
We're looking for someone who can become a key member of our small kitchen team and work closely with our Head Chef in the day-to-day running of the kitchen.
This role would suit either an experienced Sous Chef or a strong Senior CDP who is ready to take the next step and develop into a genuine kitchen leadership position.
The Noose & Money is situated Rosemount, just a short walk from His Majesty’s Theatre, we are known for our seasonal, locally-sourced elevated pub classics, generous portions, creative specials (especially seafood), brunch on weekends, Sunday roasts and a welcoming, lively atmosphere.
THE ROLE
40-45 hours working across a mixture of daytime, evening and weekend shifts.
You'll work closely with the Head Chef and will be expected to confidently take charge of the kitchen and run service in the Head Chef's absence.
This isn't simply a section-chef position. We're looking for someone who wants responsibility and can help maintain standards across the whole kitchen.
Key responsibilities
- Running busy services and taking charge when required
- Supporting the Head Chef with the day-to-day management of the kitchen
- Maintaining consistently high food and presentation standards
- Leading and supporting junior chefs and KPs
- Organising prep and ensuring the kitchen is service-ready
- Maintaining portion control and recipe specifications
- Supporting stock control, ordering and waste management
- Maintaining excellent food hygiene, allergen and HACCP standards
- Ensuring kitchen cleaning and compliance procedures are followed
- Supporting staff training and development
- Helping identify and resolve operational problems
- Contributing ideas for weekly specials and seasonal menu development
- Supporting dish testing, specifications and costings
- Helping create a positive, organised and accountable kitchen environment
WHO WE'RE LOOKING FOR
We're looking for someone who:
- Has strong experience in a quality fresh-food kitchen
- Is currently a Sous Chef, Senior CDP or experienced CDP ready to progress
- Can confidently run a busy service
- Is organised and able to prioritise effectively
- Has strong food hygiene and allergen knowledge
- Understands portion control, food costs and waste
- Takes pride in consistency and presentation
- Communicates clearly with the kitchen and FOH teams
- Can delegate and follow up
- Remains organised under pressure
- Is reliable and takes ownership of their responsibilities
- Wants to contribute ideas rather than simply follow instructions
- Is comfortable taking responsibility when the Head Chef is absent
Above all, we're looking for someone who cares about standards, takes pride in their work and wants to be an important part of the kitchen rather than simply filling a position.
Our kitchen currently operates six days per week and is closed on Mondays.
The role includes a mixture of daytime, evening and weekend shifts.
