La Follia, Caffè & Mercato is our small slice of Italy - nestled at the foot of the rolling South Downs. Beautiful, seasonal ingredients, Italian store cupboard treats and the best coffee. Everything we serve is made from scratch.
We are a caffè by day - our Cicchetti (small plates) are as big in flavour as they are small. We have now launched our Friday evening Trattoria - pasta & pudding, insalata and antipasti, along with our monthly pop-up 'Experience' Cena Italianas - traditional 4 course set menu Suppers!
We are looking for a dynamic chef with good experience who cooks from the heart and gets excited about Italian food. We will need you to work Friday (day and evening), Saturday and Sunday with some other evenings and one or two regular week days. It is important to us that you love working in a tight team and can be super organised in a small, very fast paced environment. We are a small caffè with a very close team and incredibly high standards. You will have the opportunity to showcase your own culinary talents whilst continuing to produce La Follia’s classic menu.

Responsibilities and required experience
- Lead and supervise the kitchen team to ensure efficient food production and high-quality culinary output
- Execute food preparation, cooking, plating, and presentation to meet established standards
- Ability to cost menus, follow established recipes and create new dishes
- Manage food safety protocols, sanitation procedures, and compliance with health regulations
- Coordinate with owner to plan menus, monitor inventory levels, and order supplies as needed
- Mentor and encourage team members.
- Maintain a positive work environment by fostering teamwork, motivation, and professional growth
- Ensure timely service delivery while maintaining consistency in taste, appearance, and portion control
- Experience in a private or professional kitchen or restaurant setting
- Strong background in food production, preparation, and cooking techniques
- Demonstrated leadership skills
- Excellent communication skills to coordinate with staff and serve customers efficiently
- Ability to handle fast-paced situations while maintaining attention to detail and quality standards
- Show exemplary time management and time keeping
Pay: £16.00-£19.00 per hour
