The restaurant is one of the leading dining destinations in Wales, holding a Michelin Star and multiple AA Rosettes. The food is refined and table focused, built around seasonal ingredients, local produce and the coastal setting, creating a memorable guest experience that feels polished, personal and connected to the area.
This is a hands on role within a small Front of House team of around 25, where service standards, guest care and teamwork are key. The restaurant operates a 4 day working week, although some weeks may require additional hours or an extra shift depending on the needs of the business, which will be paid accordingly.
You will work closely under a highly experienced Restaurant Manager with a strong Michelin star background, supporting the team on the floor and helping maintain the standards expected in a multiple Rosette restaurant.
Michelin experience is not essential, but the ideal candidate will have worked in a quality led or multiple Rosette environment and understand refined service, attention to detail and genuine hospitality.
This role does not provide accommodation, so you must be able to reliably commute or relocate to the area. You must also be able to drive due to the location.

Assistant Restaurant Manager Ideal Profile:
- Previous restaurant supervisor or assistant management experience in a quality led dining environment
- Experience in Michelin star, multiple Rosette or refined restaurant settings would be highly desirable
- Genuine and sincere nature with a real passion for customer service
- Confident in world wines, spirits and high quality food service
- Natural confidence and first class interpersonal skills
- Brilliant team player able to lead by example on the floor
- Hands on and comfortable supporting a small team during busy services
- Resilient, calm and able to work under pressure during long, high standard service days
- Able to resolve guest issues calmly and effectively
- Immaculate presentation with a friendly yet professional personality
- Able to drive and reliably commute to the Gower Peninsula
Assistant Restaurant Manager Responsibilities:
- Support the Restaurant Manager in the smooth day to day running of the restaurant
- Lead by example on the floor, delivering warm, polished and professional service
- Help maintain Michelin star and 3 AA Rosette service standards
- Support a small front of house team through busy, hands on services
- Guide, motivate and support team members during service
- Build strong guest relationships and ensure a memorable dining experience
- Support wine, drinks and food service with confidence and attention to detail
- Assist with training, development and daily team organisation
- Help resolve guest queries calmly and professionally
- Work closely with the wider team to maintain a positive, service focused culture
