Key Responsibilities
- Lead, inspire, and develop the sommelier team, creating a culture of expertise, excellence, and genuine hospitality.
- Curate and oversee the delivery of the wine programme across all outlets, ensuring consistency, quality, and memorable guest experiences.
- Build strong relationships with guests through personalised wine recommendations, creating experiences that are insightful, engaging, and tailored to individual preferences.
- Collaborate closely with culinary and Food & Beverage teams to develop exceptional food and wine pairings that enhance the dining journey.
- Manage wine service standards across all outlets, ensuring every bottle is presented, decanted, and served with precision and care.
- Oversee cellar operations, including stock control, inventory management, ordering, and stock rotation, maintaining the highest levels of organisation and accountability.
- Deliver engaging wine education and training programmes for both the sommelier team and wider Food & Beverage associates.
- Lead wine tastings, dinners, and special events, showcasing the hotel’s wine collection and creating unique experiences for guests.
- Contribute to the continued development and evolution of wine lists, ensuring they remain innovative, commercially successful, and aligned with guest expectations.
- Ensure compliance with all licensing requirements, health and safety regulations, and company policies relating to beverage operations.
