We specialise in North American comfort food: famous for our massive sharing boards, a British Wagyu menu built from scratch, and a food philosophy that refuses to cut corners.

The Role
As Chef de Partie at Brewski, you own your section. Every plate that leaves your pass meets our standard — no exceptions, no excuses, no shortcuts.
We don't do "reheat and serve." Every single thing on our menu is made in-house from scratch — signature sauces, house rubs, hand-pressed burgers, hand-built boards. Right now we're running British Wagyu as the centrepiece of our menu. Prep duties form part of your day to day — we batch prep everything from scratch, so your section lives and dies by the work you put in before service. The practical stuff:
- Hours: 45 hours per week (Full-Time, Permanent)
- Availability: Flexibility for split shifts, evenings, and weekends is essential
- Pay: £12.50–£14.00/hr (experience dependent) + service charge averaging £500/month — OTE circa £28,000–£31,000
A Day in the Kitchen
You'll run your section through 150–250 covers on a weekend service, working alongside a tight, experienced team. The ticket machine doesn't stop — and neither do you. Standards are non-negotiable, but so is looking after each other. If you thrive under pressure and take pride in what you put out, you'll fit right in.
Who You Are
We don't do "Jam Sandwiches." We want chefs who are genuinely passionate about food, obsessed with quality, and have the skin in the game to perform when it counts.
- Experienced — CDP-level kitchen experience in a fast-paced environment. You know how to hold a section when it gets ugly.
- Reliable — Punctual, disciplined, a strong communicator. You lead by example, you don't need chasing.
- Quality-Focused — You have a genuine love for great food. You take pride in every board you build and every plate you send.
- Ready to Hustle — Organised, clean, and HACCP-compliant without being reminded. Even on a Saturday at 8pm.
