Salary: £15.50 – £17.50 per hour (Dependent on experience)
Oak & Smoke is a premium smoked fish business based in Borough Market. We specialise in traditional Arbroath smoked fish and freshly prepared bagels. We pride ourselves on exceptional product quality, friendly service, and creating a welcoming experience for every customer. As our stall grows, we are looking for an experienced senior team member to help guide our daily floor operations and maintain our high standards. The Role We are seeking an energetic and responsible Senior Shift Leader to play a key role at our Borough Market location. This is a hands-on, customer-facing role in a fast-paced environment. You will lead by example on the floor, supervising junior staff during shifts, ensuring flawless customer service, and maintaining strict food safety standards.Key Responsibilities
- Shift Supervision: Guiding, motivating, and supporting junior retail assistants during busy service hours to ensure speed and excellent service.
- Daily Operations: Overseeing the smooth opening and closing of the stall, including cashing up, securing stock, and completing daily floor checklists.
- Customer Excellence: Serving customers, preparing our signature bagels, and confidently handling customer feedback or inquiries.
- Stall Presentation: Monitoring on-site stock levels, organizing replenishment and rotation, and ensuring displays remain clean and fully stocked.
- Hygiene & Compliance: Ensuring the stall strictly adheres to Food Hygiene standards and Health & Safety regulations throughout the day.
- Product Knowledge: Actively promoting Oak & Smoke’s premium products and sharing food knowledge with Borough Market’s diverse visitors.
What We’re Looking For Essential
- Experience: Minimum 1 year of senior or supervisory experience in a busy food service, retail, or market environment.
- Skills: Strong sales, natural confidence on the floor, and a proactive attitude.
- Attributes: Exceptionally reliable, punctual, and thriving under pressure in a high-footfall setting.
- Physical: Comfortable standing for extended periods in a busy market environment.
- Eligibility: Valid right to work in the UK.
- Certifications: Level 2 Food Hygiene Certificate (highly advantageous).

- Passion: A genuine interest in artisan food, premium seafood, and London’s culinary scene.
- Sales: A strong understanding of sales and a proven track record
