Job Description | Sous Chef - Employed Position
Hours: 45 per week on average - This is a key leadership role supporting the Head Chef, and flexibility is required, including evenings, weekends and busy trading periods. Time off in lieu will be provided where appropriate.
Salary: £32,000 - 36,000 DOE, plus participation in the Tronc scheme
Start date: June 2026 (flexible for the right candidate)

Gillson’s is a family-owned British-style brasserie opening in Summer 2026, located in the heart of Ecclesall Road, Sheffield. We're creating a welcoming, quality-focused venue built on great food, excellent service, and a genuine love for hospitality, with a focus on refined, classical brasserie cooking. We’re the team behind Gills & Co, a successful wine bar which opened in 2022, building on our passion and experience to bring something truly special to Sheffield’s dining scene.
Reporting to the Head Chef, and working collaboratively with the General Manager and wider leadership team, you’ll play a key role in supporting the day-to-day running of the kitchen. You’ll help deliver consistent, high-quality food, support the development of the team, and ensure smooth service.
You’ll work closely with the Head Chef on menu execution, team training, and maintaining standards, while taking ownership of the kitchen in their absence.
We’re looking for someone organised, hands-on, and passionate about great food and hospitality, who values collaboration and helps foster an inclusive kitchen.
What We’re Looking For
- Proven experience as a Sous Chef, or a strong Junior Sous, ready to step up
- A strong grounding in classical cooking techniques and kitchen fundamentals
- Experience supporting training, appraisals and maintaining standards
- Passion for producing refined, classical dishes with consistency and attention to detail
- Excellent organisational, communication and teamwork skills
- Strong understanding of kitchen operations, including food safety, prep systems and service
- A calm, supportive and confident presence under pressure
- Committed to building an inclusive and respectful kitchen
- Passion for food, drink, and delivering memorable hospitality
What You’ll Be Doing
Opening & Operational Leadership:
- Work alongside the owners and Head Chef to launch Gillson’s successfully
- Support the recruitment, training, and development of the kitchen team
- Help implement systems and processes that ensure smooth day-to-day operations
- Lead by example with empathy and professionalism, maintaining high standards across service, cleanliness, and presentation
- Work with the Head Chef in overseeing and supporting the day-to-day kitchen operations with a hands-on, collaborative approach
- Ensure service runs smoothly, with dishes consistently sent out on time and to spec
- Maintain strong communication with front-of-house, especially during pre-shift meetings
- Support the Head Chef with rota planning and team organisation
- Support performance reviews and contribute to ongoing team development
Menu Development & Execution:
- Work with the Head Chef and leadership team to deliver a seasonal menu rooted in classical brasserie cooking.
- Support the execution of:
- Dish prep and consistency during service
- Allergen awareness, plating specs, and prep standards
- Internal tastings and feedback sessions
- Support the team in achieving kitchen performance and consistency targets
Stock & Supplier Management:
- Support stock ordering and management to ensure quality, price and availability
- Assist in maintaining correct par levels during busy and quieter periods
- Build positive relationships with suppliers and report any issues
- Support stock takes and waste control
Hygiene & Food Safety:
- Support the kitchen team in achieving and maintaining a 5-star Environmental Health rating
- Follow and help maintain a robust cleaning schedule
- Ensure daily tasks such as food and fridge temp checks, and cleaning logs, are completed and recorded
- Lead by example in creating a safe, clean, and organised kitchen at all times
