Opening in August 2026, The Lyon is an exciting new gastropub and late-night destination located in the heart of Edinburgh's George Street.
With exceptional food at its core, a premium drinks offering, live music and a vibrant atmosphere, The Lyon aims to become one of the city's most exciting hospitality venues. We are looking for experienced bartenders to join our opening team and help create an outstanding guest experience from day one.
As a Bartender at The Lyon, you will be responsible for preparing and serving a wide range of drinks, maintaining high service standards and helping to create a welcoming and energetic atmosphere. This is a hands on role that requires strong product knowledge, excellent attention to detail and a willingness to support the wider front of house team whenever required.
Key Responsibilities
- Prepare and serve cocktails, spirits, wines, beers and soft drinks to a consistently high standard
- Maintain excellent knowledge of our drinks menu and make recommendations to guests
- Deliver fast, friendly and professional service during busy periods
- Ensure the bar is clean, organised and fully stocked throughout service
- Monitor stock levels and communicate shortages to management
- Follow all licensing, health and safety and food hygiene procedures
- Support floor staff with food and drink service when required
- Contribute to the lively and welcoming atmosphere that defines The Lyon
What We're Looking For
- Previous experience working behind a busy bar is essential
- Confidence preparing classic cocktails and mixed drinks
- Excellent communication and customer service skills
- A positive attitude and strong work ethic
- Ability to work efficiently under pressure
- Strong attention to detail and pride in your work
- A genuine passion for hospitality and creating memorable guest experiences
- Cocktail experience is preferred
