Restaurant and Events General Manager – YOPO Zaytoun at The Mandrake

YOPO Zaytoun is the latest evolution of The Mandrake’s celebrated dining experience. Rooted in the vibrant traditions of the Eastern Mediterranean, the restaurant delivers bold flavours, exceptional ingredients, elevated service, and immersive guest experiences within one of London’s most distinctive luxury hotels.
We are seeking an exceptional Restaurant General Manager to lead YOPO Zaytoun into its next chapter. This is a rare opportunity for an ambitious hospitality leader to shape a destination restaurant, inspire a high-performing team, and create memorable experiences for an international luxury clientele.
The Role
As General Manager, you will take full operational responsibility for the restaurant, terrace, and guest experience, ensuring flawless execution, strong financial performance, and a culture of excellence.
You will work closely with the Executive Leadership Team, Head Chef, and Food & Beverage leadership to drive commercial success while maintaining the creativity, energy, and attention to detail that define The Mandrake.
Key Responsibilities Leadership & Culture
- Lead, coach, and inspire a passionate front-of-house team.
- Create a culture of accountability, engagement, and continuous development.
- Recruit, train, and retain exceptional hospitality professionals.
- Lead by example on the floor, setting the highest standards of service and professionalism.
Guest Experience
- Deliver consistently outstanding guest experiences that exceed expectations.
- Build meaningful relationships with VIP guests, residents, influencers, and industry partners.
- Ensure every service reflects the unique identity and standards of YOPO Zaytoun.
- Handle guest feedback proactively and professionally.
Commercial Performance
- Own and deliver revenue, profitability, and cost-control targets.
- Drive covers, average spend, beverage performance, and guest retention.
- Identify commercial opportunities and work with the marketing team on activations, events, and partnerships.
- Analyse performance data and implement strategies to maximise results.
Operations
- Oversee all day-to-day restaurant operations.
- Ensure compliance with health & safety, licensing, and company policies.
- Manage rotas, labour costs, stock control, and operational efficiencies.
- Maintain exceptional standards across service, presentation, and cleanliness.
About You
You are a charismatic hospitality leader with a proven track record of managing premium or luxury dining environments.
Essential Experience
- Minimum 3–5 years’ experience as a General Manager or senior restaurant leader.
- Proven success within luxury hospitality, premium restaurants, members’ clubs, or five-star hotels.
- Strong financial and commercial acumen.
- Experience leading large teams and developing future leaders.
- Excellent understanding of food, wine, cocktails, and elevated guest service.
