ROLE OVERVIEW
Full Circle Brew Co. is opening an exciting new city centre bar and restaurant in Newcastle city centre in partnership with Peckin' Order, bringing an elevated fried chicken and burger concept to the heart of the city. As Chef de Partie, you'll be a key part of the kitchen team — working at pace alongside the Head Chef to deliver every dish to an exacting standard, every service. The menu is tight and the execution has to be flawless; if you thrive under pressure, take real pride in your output, and love the buzz of a fast-moving kitchen, this is the role for you.
Initially we have a 2 year contract, but if this venture is successful we hope to be able to extend.
Salary advertised is not inclusive of "tronc". We have a clear policy on the division of tronc between bar and catering staff.
Hours per week expected: 40
Part Time and Full Time applications are welcome.
KEY RESPONSIBILITIES
- Prepare and cook all dishes to the Peckin' Order recipes and plating guides — consistency and presentation are non-negotiable.
- Own your station: arrive prepped, stay organised, and maintain quality throughout every service.
- Work at pace during busy services without allowing standards to slip.
- Support the Head Chef in training and guiding commis chefs on the team.
- Lead the kitchen confidently in the Head Chef's absence, maintaining standards and keeping service running smoothly.
- Maintain a clean, organised, and safe kitchen environment at all times.
- Follow all HACCP procedures, allergen controls, and food safety standards without exception.
- Assist with stock rotation, prep, and daily mise en place as required.
- Flag any equipment issues, stock shortages, or food safety concerns to the Head Chef promptly.
What We're Looking For
- Solid experience as a Chef de Partie or strong Commis Chef ready to step up, ideally with a background in a fast-paced, high-volume kitchen — burger, fried chicken, or similar concept experience is a real advantage.
- Comfortable working at pace under pressure — you thrive in a busy service, not just cope with it.
- A genuine commitment to consistency: you understand that replicating a dish perfectly every time is a skill in itself.
- Food hygiene certificate (Level 2 minimum) required, or willingness to obtain before starting.
- A reliable team player who takes ownership of their station and supports those around them.
Pay: £27,000.00-£30,000.00 per year
