The Royal Hotel, Comrie, Perthshire, the gateway for any trip to the highlands, an esteemed independently-owned boutique hotel with eleven charming bedrooms, is seeking an experienced and committed Junior Sous Chef to assist our teams culinary operations. You will play a pivotal role in delivering exceptional, well-presented cuisine that showcases Scotland’s rich natural larder, consistently meeting or exceeding one AA Rosette standards.

With upcoming refurbishment plans for our guest rooms, we are looking for a dedicated team player who will contribute to the continued success and growth of our hotel.
Role Overview:
You will be hands-on, cooking lunch and dinner service five days a week and heading up / running service for two of your five days on. You will be part of a small, committed team, driving forward the hotel’s food offerings. You will collaborate closely with the Head Chef to implement honest, flavorful dishes that enhance the hotel's appeal as a dining destination and support the success of the hotel throughout the year.
Key Responsibilities:
- Assist the Head Chef in overseeing daily kitchen operations and staff management.
- Take responsibility for service on Head Chef's days off
- Ensure adherence to food safety regulations and maintain high standards of hygiene.
- Prepare and cook high-quality dishes according to the restaurant's menu specifications.
- Supervise kitchen staff, providing guidance and support during food preparation and service.
- Collaborate with the culinary team to develop new menu items and improve existing recipes.
- Monitor inventory levels of ingredients and supplies, placing orders as necessary.
- Train new kitchen staff on cooking techniques, food safety practices, and operational procedures.
- Help maintain a clean and organised kitchen environment, ensuring all equipment is properly maintained.
Our Ideal Candidate Will:
Currently be cooking at Senior CDP or Junior Sous level to a minimum of one AA Rosette standard.
Possess extensive hands-on experience, working a busy kitchen within an F&B-focused hotel environment.
Have a comprehensive understanding of food safety, hygiene regulations, and best practices.
What We Offer:
A competitive salary of up to £30,000 to £35,000, commensurate with experience. There is the possibility that live - in accommodation can be provided for the right candidate.
