Falls by Orry Shand – Banchory, Royal Deeside
Falls is an ambitious, ingredient-led restaurant in the heart of Royal Deeside, Banchory. Led by Chef Patron Orry Shand (formerly Restaurant Andrew Fairlie and Number One at The Balmoral), the restaurant focuses on a relaxed fine dining experience rooted in precision, seasonality, and exceptional hospitality.
We operate a seasonal tasting menu with approximately 30 covers per evening across two sittings, delivered by a small, highly collaborative team.
The Role
We are looking to recruit a passionate and highly motivated Bar Manager/Sommelier to join the team at Falls by Orry Shand.
This is a hands-on leadership role within a small team, combining floor leadership, wine service, and bar responsibility. You will work closely with the Restaurant Manager to ensure each service is delivered with precision, warmth, and attention to detail.
You will play a key role in shaping the guest experience and will have meaningful input into the development of the drinks programme, including wine pairings and cocktail offerings.

Working Pattern
- 48-hour contract
- 4-day working week
- Dinner service only (Wednesday–Saturday)
Key Responsibilities
- Support the day-to-day running of the restaurant alongside the Restaurant Manager
- Take a leading role on the floor, including running service when required
- Experience delivering wine pairings and confident, engaging tableside service
- Take ownership of bar operations, including preparation, service, and ongoing development
- Contribute to the development and refinement of the drinks offering (wine, pairings, and cocktails)
- Lead by example in delivering warm, attentive, and knowledgeable hospitality
- Support the training and development of junior front of house team members
Requirements
- Minimum two years’ experience in a supervisory or management role within a quality-led restaurant environment
- Strong attention to detail and a highly organised approach to service
- Confident leading a small team in a service environment
- Experience delivering wine pairings and confident, engaging tableside service
- Solid foundation in wine knowledge (WSET Level 2 or equivalent preferred)
- Experience working with wine pairings and confident tableside service
- Competent across all aspects of bar service, including classic cocktails and an openness to develop seasonal offerings
- A calm, professional presence with strong communication skills
- A genuine enthusiasm for food, drink, and hospitality
Salary & Benefits
- £32,000 per annum (dependent on experience)
