Job Description
At Fairmont St Andrews, we believe exceptional guest experiences begin behind the scenes. We're looking for an analytical, commercially minded Food & Beverage Controller to play a key role in protecting profitability while supporting the delivery of world-class food and beverage experiences across our luxury resort.
Working closely with the Director of Food & Beverage, Director of Finance, Executive Chef and operational leaders, you'll take ownership of stock control, food and beverage costing, financial reporting, and purchasing processes across our restaurants, bars, banqueting, events, in-room dining, and retail operations.
What you'll be doing
As our Food & Beverage Controller, you'll be responsible for ensuring our food and beverage operations are commercially efficient, financially robust, and aligned with Fairmont and Accor brand standards.
Your responsibilities will include:

Managing daily, weekly and monthly stock control across all food and beverage outlets.

Monitoring stock variances, wastage, breakages and spoilage, identifying opportunities to improve profitability.

Maintaining accurate recipe costing and supporting menu pricing and engineering alongside the Executive Chef and Food & Beverage Director.

Producing daily and monthly cost reports, analysing trends and presenting key insights to senior leadership.

Overseeing purchasing controls, supplier pricing and inventory management through Procure Wizard.

Ensuring the integrity of EPOS, purchasing and finance systems while maintaining accurate stock records.

Supporting budgeting, forecasting and cost-saving initiatives through detailed financial analysis.

Leading the Goods Receiving and Stores team, providing guidance and ensuring best practice is followed.

Delivering training and support to managers on stock control procedures, ordering disciplines and financial compliance.

Supporting internal and external audits while ensuring compliance with Accor standards and internal controls.
Qualifications
What we're looking for
We're seeking someone who combines financial expertise with a genuine understanding of hospitality operations.
You'll ideally have:

Previous experience in an F&B Control or Cost Control role within a hotel or hospitality environment.

A strong understanding of food and beverage financials, including GP%, Cost of Goods Sold (COGS) and stock management.

Advanced Excel skills and experience using stock control, purchasing and EPOS systems.

Excellent analytical skills with exceptional attention to detail.

The confidence to build strong relationships and positively influence senior operational leaders.

Outstanding organisational skills with the ability to manage multiple priorities across a busy luxury resort.

A proactive approach, always looking for ways to improve processes, reduce costs and increase profitability.
Experience with Procure Wizard, Opera, Sun Systems or similar hospitality systems would be highly advantageous.
