We are looking for an exceptional Chef to join us in one of the key restaurants in the Norfolk casual fine dining scene. You will be ambitious, organised and be prepared to train and develop a high performing team. Operating to high standards you will have input into all aspects of the culinary offering using a 100% fresh menu with ingredients sourced as locally as possible. We gained 2 AA Rosettes less than 6 months after opening and we are ambitious to improve upon this. We are a family owned business with highly rated reviews and offer a fabulous opportunity to grow and be a key part of a respected independent in the local market. Working a four day week this role offers an excellent platform for the right candidate. Possible equity stake after a qualifying period.
Responsibilities
- Lead all kitchen operations, including food preparation, cooking, and clean up
- Produce dishes across the whole offer using the best of local produce.
- Plan menus and set prices based on the availability of ingredients
- Inspect raw and cooked food to guarantee quality
- Arrange for repairs, replacement and servicing of equipment when necessary
- Resolve issues as they arise to ensure the continuation of food service
- Manage and train kitchen staff
- Be fully involved in hiring, managing and training kitchen staff
- Create a real team ethic and supervise the work of the kitchen staff
- Maintain supplier relationships
- Manage inventory and order stock as required
- Collaborate with the Restaurant manager to align kitchen operations with the overarching goals of the establishment
Requirements and skills
- Ambition
- Experience as a Head or Sous Chef in a AA rosette restaurant or higher
- Excellent record of kitchen and staff management
- Familiar with industry’s best practices
- Ability in dividing responsibilities and monitoring progress
- Outstanding communication and leadership skills
- Up-to-date with culinary trends and optimised kitchen processes
