The Role:
We’re looking for an experienced and passionate Sous Chef to support our Head Chef in delivering exceptional food using Cornwall’s finest local produce and seafood. This is a hands-on role ideal for someone who thrives in a dynamic, high-energy kitchen with a love for beachside hospitality and open-fire cooking. 44 hours a week contracted.
Key Responsibilities:
- Support the Head Chef in daily kitchen operations, menu execution, and team supervision.
- Lead service during busy shifts, including beach BBQs and event catering.
- Prepare and cook high-quality dishes, from grilled steaks to fresh-caught lobster, octopus, and shellfish.
- Ensure consistency, cleanliness, and compliance with food hygiene standards.
- Mentor junior kitchen staff and help maintain a positive team culture.
- Assist with ordering, stock control, and waste reduction.
What We’re Looking For:
- Proven experience in a Sous Chef or strong Chef de Partie role in a fast-paced, quality kitchen.
- Strong knowledge of seafood preparation and cooking techniques.
- Passion for local ingredients, fire cooking, and modern coastal cuisine.
- Flexible, reliable, and calm under pressure.
- Level 2 Food Safety (minimum); Level 3 desirable.
- A team player with excellent communication skills.

Responsibilities:
- Support the Head Chef in the day to day kitchen operations, ensuring high quality dishes & efficient services.
- Prepare & cook our dishes, focusing on flavour & presentation.
- Help maintain a clean, organised & safe kitchen.
- Collaborate on menu development, bringing new ideas to the table.
- Manage inventory, stock levels & ordering.
- Running of the kitchen in the absence of the Head Chef, ensuring continuity & quality.
