About Us
We are launching a refined, destination gastropub at the back end of July, and we are hunting for an ambitious, driven Sous Chef to complete our founding kitchen brigade.
Our culinary concept centers around a bespoke live-fire Portico Grill, showcasing a small, hyper-seasonal, and meticulously sourced British menu. Led by our newly appointed Head Chef, who brings an elite culinary pedigree from world-class establishments like The Three Chimneys and Tom Kerridge’s The Coach.

The Role
You will be our Head Chef's right hand and the engine room of the kitchen. You won’t just be cooking; you will be a true leader in a high-performance environment.
Key Responsibilities:
- Culinary Execution: Maintaining flawless consistency and precision on the line, mastering live-fire cooking techniques on the Portico Grill.
- Operational Excellence: Assisting with stock control, GP management and rota efficiency.
- Flawless Compliance: Taking a proactive role in maintaining our strict food safety, HACCP, and hygiene standards to ensure a guaranteed 5-star EHO rating.
About You
- You are an experienced Senior Chef de Partie ready to step up, or an established Junior Sous Chef looking for a fresh, high-profile challenge.
- You have a background in premium, fresh-food gastropubs or rosette/accoladed restaurants.
- You possess a strong technical foundation, an eye for detail, and a calm, structured style under pressure.
- You are genuinely passionate about seasonal British ingredients and eager to learn advanced live-fire techniques.
- You hold up-to-date Food Hygiene Level 2/3 qualifications.
