Job Summary
As a Duty Manager of Chin-Zano, you will be reporting directly to the General Manager and Director throughout your tenure.The primary focus of the role of the AGM will be to lead day to day operations within the restaurant, with the focus of delivering exceptional guest experiences that have become a staple of Chin-Zano. You will oversee front- and back-of-house teams when necessary, collaborating with the kitchen lead to ensure menu quality, speed and consistency while fostering a positive, accountable culture focused on continuous improvement.
Core Responsibilities
- Operations management: Open/close procedures, shift management, cash handling, reservations/waitlist, and service recovery.
- People leadership: schedule, train, and performance-manage staff; run pre-shifts and coaching.
- Guest experience: Maintain service standards, resolve complaints, monitor reviews, and implement improvements.
- Financial stewardship: Budgeting, P&L review, menu mix analysis, pricing, labor and COGS control, and daily reporting.
- Quality and safety: Food safety (HACCP), health inspections, cleanliness, maintenance, and vendor compliance.
- Compliance: Licensing, age verification, allergy protocols, and labor law adherence.
KPIsGuest Experience
- Average Review Rating: ≥ 4.5/5 across platforms; response rate to reviews ≥ 95% within 48 hours.
- Complaint Resolution Time: Median under 15 minutes in-house; 24 hours for post-visit follow-ups.
Sales and Revenue
- Average Check (Spend per Head): Meet or exceed weekly target; track by daypart.
- Table Turn Time: Lunch 60-70 min; Dinner 60–90 min, balanced with experience.
- Upsell/Attachment Rate: Appetizers, desserts, beverages attachment ≥ target (e.g., 25–35%).
Operations and Quality
- EHO Health/Safety Audit Score: 5/5
- Ticket Times: Lunch mains ≤ 12 minutes; dinner mains ≤ 18 minutes; cocktails ≤ 6 minutes.
- Preventive Maintenance Compliance: 100% of scheduled tasks completed on time.
People and Culture
- Minimalise Staff Turnover with increasing team
- Absence/No-Show Rate: ≤ 1% of scheduled hours.
- Training Completion: 100% for onboarding, safety, and role certifications.

Reporting Cadence
- Daily: Sales vs. forecast, labor %, COGS-sensitive items, ticket times, incidents.
- Weekly: GSS/reviews, menu mix, waste, scheduling accuracy, top issues/action plan.
- Monthly: P&L review, prime cost, turnover.

Pay: £30,000.00-£32,500.00 per year
