WE’RE HIRING - JUNIOR SOUS CHEF / SOUS CHEF | FLETCHER’S, STIRLING
Fletcher’s is growing, and we’re looking for an experienced and ambitious chef to join our established kitchen team.
We’re particularly interested in speaking to a strong Junior Sous Chef who feels ready to take the next step towards Sous Chef level, or an experienced chef already operating at that level who is looking for a new challenge.
Fletcher’s is a busy, quality-driven restaurant operating 7 days a week, and we need someone with a strong professional kitchen background who can take responsibility, lead by example and become an important part of our senior kitchen team.
This isn’t an entry-level position. You should already be confident running a section during high-volume service and now be ready to take on more responsibility within the kitchen.
WHO WE’RE LOOKING FOR
You’ll have:
- Strong experience in a busy, quality-driven kitchen
- Experience at Junior Sous Chef level or similar
- The ability to confidently run and take ownership of a section
- Strong knowledge of fresh food preparation, cooking and presentation
- Excellent organisation, prep and time-management skills
- The ability to remain calm, consistent and organised during busy services
- Strong communication skills and the confidence to help lead a kitchen team
- High standards across food quality, presentation, cleanliness and organisation
- A good understanding of stock control, ordering, waste management and kitchen procedures
- A team-first attitude and willingness to support and develop the chefs around you
- The confidence to work closely with our Head Chef and Sous Chef, while bringing your own experience and ideas to the kitchen

THE ROLE
You’ll be involved in:
- Busy breakfast, lunch and dinner services
- Running and maintaining your own section
- Helping lead service alongside the Head Chef and Sous Chef
- Fresh food preparation and maintaining consistent standards
- Daily kitchen organisation and prep planning
- Stock control and ordering
- Maintaining food safety, cleanliness and kitchen standards
- Supporting and developing junior members of the kitchen team
- Contributing towards menu development and seasonal menu changes
- Taking greater responsibility for the kitchen as you develop into the role

WHAT WE OFFER
£31,500 – £37,000 total package (salary + tronc), depending on experience
