This is such a dreamy role, an incredible wlb and the opportunity to work with some of the world’s finest wines. The wine list here is deep with predominantly old-world wines but plenty of modern classics too and some incredible allocation wines. As the restaurant opens M-F most of your time will be spend in service but there is dedicated admin time for the weeks where you will be in charge of ordering or stock management. The head somm is super collaborative so you’ll work with them on cellar management, ordering and liaising with suppliers, creating tasting flights and delivering team training. The restaurant does open for a few Saturdays each year, mostly December, and you would be paid overtime for any extra hours worked.
