About Us
Parosna is an independent neighbourhood restaurant, café and wine bar in the heart of Didsbury Village.
Our menus combine modern European cooking with regional Indian influences, drawing inspiration from the South of India whilst maintaining a strong focus on seasonality, quality ingredients and exceptional hospitality.
We're not a traditional curry house and we're not a generic brunch venue. We're building something different, with ambitious food, high standards and a genuine focus on creating one of Manchester's most exciting independent restaurants.
As we continue to grow, we're looking for an exceptional Head Chef to take ownership of the kitchen and help lead the next stage of the business.
The Opportunity
This is a genuine Head Chef position with significant responsibility and autonomy.
You'll be expected to take ownership of all kitchen operations, including:
Kitchen Leadership
- Lead and develop the kitchen team
- Create a positive, professional and accountable kitchen culture
- Recruit, train and retain team members
- Ensure high standards are maintained across all shifts
Kitchen Operations
- Run day-to-day kitchen operations across brunch, dinner and events
- Lead busy services while maintaining consistency and quality
- Manage prep schedules and kitchen organisation
- Ensure all dishes are delivered to specification
Stock & Financial Control
- Manage all ordering and supplier relationships
- Complete stocktakes and maintain accurate stock control systems
- Control food cost, wastage and labour spend
- Work within agreed GP and budget targets
- Understand the commercial impact of kitchen decisions on overall business performance
Food Quality & Development
- Maintain consistency, presentation and portion control
- Work closely with ownership on menu development
- Contribute ideas for seasonal specials and menu improvements
- Uphold food safety, hygiene and compliance standards at all times
You'll be stepping into a role currently undertaken by one of the owners, so we're looking for someone capable of managing every aspect of a busy professional kitchen.
What We're Looking ForEssential
- Previous Head Chef or strong Senior Sous Chef experience
- Strong knowledge of Indian cuisine, ingredients and cooking techniques
- Proven experience leading and managing kitchen teams
- Experience with stock control, ordering and supplier management
- Strong understanding of food costs, gross profit and kitchen budgets
- Excellent organisational and leadership skills
- Ability to perform under pressure in a fast-paced environment
- High standards of cleanliness, professionalism and food safety
Highly Desirable
- Experience with regional Indian cuisine beyond standard curry-house menus
- Experience blending Indian flavours with modern European techniques
- Experience working in quality-led independent restaurants
- Passion for seasonality, menu development and continuous improvement
