Job Purpose
We are looking for a skilled and passionate Vietnamese/Chinese Chef to join our kitchen team. The successful candidate will be responsible for preparing authentic, high-quality Vietnamese and Chinese dishes, maintaining consistency and presentation standards, and contributing to a smooth and efficient kitchen operation.
Key Responsibilities
- Prepare and cook a range of authentic Vietnamese and Chinese dishes to a consistently high standard
- Follow recipes, portion sizes, and presentation standards set by the restaurant
- Prepare ingredients, sauces, stocks, and marinades from scratch
- Manage stock levels, ordering, and stock rotation (FIFO) to minimise waste
- Ensure the kitchen and all equipment are kept clean, organised, and compliant with food hygiene and safety regulations
- Monitor food quality and freshness, ensuring dishes are served promptly and to specification
- Work efficiently under pressure during busy service periods
- Collaborate with other kitchen staff, front-of-house team, and management to ensure smooth service
- Assist with menu development and suggest new or seasonal dishes where appropriate
- Train and support junior kitchen staff or kitchen porters as required
- Adhere to all health, safety, and food hygiene standards (e.g. HACCP)
- Maintain accurate records for food safety, temperature checks, and allergen information
Skills & Experience Required
- Proven experience as a chef specialising in Vietnamese and/or Chinese cuisine
- Strong knowledge of traditional cooking techniques, ingredients, and flavour profiles for both cuisines
- Ability to prepare dishes such as [insert examples, e.g. pho, spring rolls, banh mi, stir-fries, dim sum, fried rice/noodles, roast meats]
- Good understanding of food hygiene and safety practices (Level 2 Food Hygiene Certificate or equivalent preferred)
- Ability to work efficiently in a fast-paced kitchen environment
- Strong organisational and time-management skills
- Good communication skills and ability to work well within a team
- Flexibility to work evenings, weekends, and holidays as required
- Physical stamina to stand for long periods and lift moderate weights
Desirable
- Formal culinary qualification or apprenticeship
- Experience in a high-volume or fine-dining kitchen
- Fluency in Vietnamese and/or Mandarin/Cantonese (an advantage, not essential)
- Knife skills certification
Pay: £13.00-£15.00 per hour
