We are a growing sushi kiosk business dedicated to delivering fresh, high-quality Japanese cuisine and outstanding service. We are looking for an experienced Sushi Chef / Section In Charge to oversee counter operations across our sites in Pengam Green and Risca, Newport.
Key Responsibilities
- Operations & Production: Manage daily kiosk operations, handcrafting fresh sushi and ensuring top-selling items are fully stocked. Handle daily opening, closing, and delivery receiving.
- Multi-Site Support: Operate seamlessly across both the Pengam Green and Risca counters, providing leadership and flexibility where needed.
- Food Quality & Safety: Maintain exceptionally high standards of food quality, presentation, hygiene, and date-checking, ensuring full compliance with food safety regulations.
- Financial Assistance: Support the Manager in managing labour costs, food costs, portion control, and waste to maximize profitability.
- Leadership & Team Management: Assist with rota creation, holiday management, and shift coverage. Train and coach team members, providing constructive feedback to maintain a high-performing team.
- Brand Standards: Ensure consistent brand standards and exceptional customer service across both counter locations.
Requirements & Experience
- Location & Mobility: Must have reliable transport and full capability to travel to both Pengam Green and Risca (Newport) sites as required by the business schedule.
- Sushi Craftsmanship: Proven experience in sushi preparation, knife skills, and food safety standards.
- Leadership Experience: Previous supervisory or team lead experience in a fast-paced kitchen, food kiosk, or retail catering environment.
- Commercial Mindset: Understanding of operational targets, waste control, and daily counter management.
- Flexibility: Adaptable mindset to handle shift coverage and support busy periods across both sites.
