Proud recipients of the OpenTable Diners' Choice Award in both 2024 and 2025, we are now seeking a Senior Hot Section Chef to join our team.
The Role:
As a Senior Hot Section Chef, you will take ownership of the hot kitchen (Agemono, Yakimono, Nimono, etc.), ensuring every dish matches the exceptional standards of our Omakase sushi menu.
Key Responsibilities:
- Manage and run the hot section of the kitchen during high-pressure service.
- Prepare and cook refined Japanese hot dishes (including traditional grills, tempura, and simmered dishes) with precise presentation.
- Maintain strict portion control, food safety (HACCP), and hygiene standards.
- Collaborate with Chef Masa on seasonal menu development and prep work.
- Mentor and supervise junior kitchen staff, fostering a positive and professional team environment.
- Manage stock control, ordering, and minimize food waste within your section.
Requirements:
- Proven experience as a Senior Chef / Section Chef specializing in Japanese hot cuisine (minimum 3–5 years).
- Deep understanding of traditional Japanese cooking techniques, ingredients, and seasonal presentation.
- Ability to work efficiently under pressure in a high-end, fast-paced dining environment.
- Strong communication and leadership skills.
- Excellent knowledge of food safety, health, and safety regulations.
- Must have the right to work in the UK.
