Overview
At K10 Sushi Production Kitchen we are seeking a skilled and passionate Sushi Chef, specialised on FISH CUTTING/FILLETING to join our vibrant culinary team. The successful candidate will be responsible for preparing authentic Sashimi, Nigiri and sushi rolls, ensuring the highest standards of quality, presentation, and food safety. The type of fish we mainly use is Salmon and Tuna (sashimi grade) on large daily amounts.
This role is a Monday to Friday schedule.
Duties
- Prepare a variety of sushi, sashimi, and other Japanese dishes with precision.
- Ensure all food preparation meets established quality and safety standards
- Maintain cleanliness and organisation of the kitchen area in accordance with food safety regulations
- Assist in developing new menu items and seasonal specials
- Manage ingredient inventory, ensuring freshness and proper storage
- Adhere to all health and safety guidelines, including food handling procedures and hygiene standards (We have SALSA accreditation)
- Serve dishes promptly and professionally to guests, ensuring presentation is visually appealing
Qualifications
- Proven experience in Sushi making and mostly on Fish cutting.
- Strong knowledge of sushi preparation techniques and Japanese cuisine
- Familiarity with food safety regulations and best practices in a professional kitchen
- Excellent organisational skills with the ability to work efficiently under pressure
- Good communication skills and the ability to work well within a team
- Passion for culinary arts and a keen eye for detail in meal presentation
