Cocotte is a neighbourhood rotisserie restaurant group, known for its fresh, high-quality chicken, seasonal sides, and warm, welcoming service. We are looking for an experienced and driven Restaurant Manager to lead one of our London sites and deliver exceptional results across service, team development, and financial performance.
The Role
As General Manager, you will take full ownership of the restaurant’s performance, leading both front and back of house teams to deliver outstanding guest experiences while driving sales, controlling costs, and maintaining high operational standards.
You will be a visible leader on the floor, setting the tone for service, developing your team, and ensuring the restaurant consistently operates at its best.
Key Responsibilities
- Oversee the day-to-day running of the restaurant, ensuring smooth and efficient operations
- Lead, inspire and develop both FOH and BOH teams
- Drive sales performance and maximise profitability
- Manage labour, rotas and staffing levels in line with business needs
- Maintain strong control over costs including labour and cost of sales
- Deliver exceptional guest experiences and handle feedback professionally
- Ensure high standards of service, cleanliness and presentation at all times
- Take ownership of stock control, ordering, and financial procedures
- Monitor and improve key performance indicators (sales, labour %, COS, guest feedback)
- Ensure full compliance with health & safety, food hygiene and licensing regulations
What We’re Looking For
Essential
- Proven experience as a General Manager or Assitant General Manager in a busy, food-led restaurant
- Strong commercial awareness with a track record of managing P&L performance
- Excellent leadership and team development skills
- Passion for hospitality and delivering outstanding guest experiences
- Highly organised, hands-on and proactive
- Ability to perform under pressure in a fast-paced environment
Desirable
- Experience within casual dining or premium casual restaurant groups
- Experience working with KPIs and structured performance targets
