Cottonrake is a an independent craft bakery in Glasgow dedicated to delivering the highest standards in pastry, sourdough bread and speciality coffee.
We are seeking a skilled and passionate Pastry Chef with 3–4 years of experience to join our production kitchen. The ideal candidate will have a solid background in pastry production, with a strong eye for detail, consistency, and creativity. It is a hands-on production and finishing role, reporting directly to the Head of Pastry.
Key Responsibilities
- Prepare and bake a range and pastries from scratch according to established recipes and production schedules.
- Prepare choux pastry, tarts, entremets, and classical patisserie cakes.
- Monitor inventory of baking ingredients and supplies and report shortages as needed.
- Ensure cleanliness and organisation of the baking station and equipment in accordance with food safety and hygiene standards.
- Assist in developing new recipes and seasonal items in collaboration with the Head Baker or Bakery Manager.
- Maintain consistency in portioning, shaping, and presentation of products.
- Strong foundations in classical patisserie techniques
- Excellent piping, masking, and delicate finishing skills
- Deep understanding of ingredient behavior and precise scaling
- High speed and consistency during repetitive production tasks
- Follow all health and safety guidelines, including allergen handling and HACCP procedures.
Qualifications & Skills
- 3–4 years of hands-on experience in a professional bakery or patisserie setting.
- Strong foundational knowledge of fermentation, dough handling, lamination, and pastry techniques.
- Familiarity with artisan bread and viennoiseries production is necessary.
- Ability to work early mornings, weekends, and under pressure in a fast-paced environment.
- Excellent time management and organisational skills.
- High attention to detail and commitment to quality.
- Team player with good communication skills and a positive attitude.
Working Conditions
- Standing for extended periods, lifting bags of flour/supplies (up to 25kg).
- Collaborative team environment with opportunities to grow and learn.
Working PatternDays: Typically 4 days per week (10 hour shifts) on a rotating schedule.
Breaks: Scheduled in line with working hours and in accordance with labor laws.
Flexibility: Occasional adjusted hours during peak seasons, product launches, or special events.
