Badger Badger is a 6 year established independant board gaming focused pub with a Japanese street food restaurant. We are seeking an experienced sous chef or head chef to take a leadership role in our kitchen. We have a pleasant and well organised kitchen and plenty of time to comfortably introduce the successful candidate into our methods of operating.
The Badger Badger food offer is Japanese/American fusion with a focus on live fuel Yakitori BBQ. Both street food and restaurant/pub kitchen experience is desirable as we essentially offer a street food menu and service in a board game pub environment. The quality and imagination in our cooking is outstanding at a street food level.
The successful candidate will have the following qualities:
- A passion for delivering high quality food due to a thoughtful and enthusiastic cooking philosophy.
- A calm, friendly and communicative personality. Our kitchen culture is friendly, hard working and fair. Everyone pulls their weight on every station and as such the work is not stressful or overwhelming. There is also a great relationship between front and back of house. We need someone who can maintain discipline, standards and routine through friendly constructive communication.
- The ability to work alongside our the business owners on menu development. We all have good experience in the kitchen and are really into food. This means that we can support the kitchen as needs be at any level and we encourage a healthy back and forth about new dishes.
- A healthy understanding of the key performance indicators for your department. Volume of trade, gross profit percentages, wage percentages, customer reviews and EHO standards will be discussed across all departments at the weekly manager meeting at 3pm on Mondays.
- Able to recruit and train any new kitchen team members. This will not be required immediately as we are really happy about our existing team but sooner or later thoughtful and pro active team building will always be required.
- The ability to manage your own efforts and energy so that you continue to work happily with us. 45 hours is a good amount to work each week whilst maintaining a stable personal life. We do not want to see you work yourself into the ground. Working smart is better than too long and hard.
- Someone who sees the training and operational value to delegating kitchen duties to your eager junior chefs. They want training and progression, give it to them!
- Oversee daily and weekly food safety and HACCP checks and processes. We have only ever had 5 star EHO reviews and will keep it that way.
- Oversee all order / delivery / invoice paperwork is being correctly managed by you or your team.
- Will be eager to work closely with the floor and general manager to identify and correct any service issues
- Able to write rotas in a manner which provides consistency and a work/life balance for you and your team.
