Tips have recently averaged just over £40 per evening, bringing typical total earnings to approximately £20 per hour, depending on shift length and gratuities.
Fig. is looking for a highly experienced restaurant professional to join our small front of house team.
This is a hands-on service role for someone who understands how an excellent restaurant evening should feel: warm, polished, well-paced and quietly organised. We need someone who can deliver exceptional service personally while also seeing the bigger picture across the restaurant.
You will be confident taking ownership of your section, supporting the flow of service and helping maintain high standards throughout the evening.
The role
Your responsibilities will include:
- Delivering attentive, polished and genuinely warm table service
- Welcoming guests and helping set the tone for their evening
- Confidently discussing our tasting menu, ingredients, wines and drinks
- Taking ownership of a section and anticipating what is needed during service
- Helping maintain the pace, organisation and atmosphere of the restaurant
- Supporting less-experienced colleagues and leading by example
- Communicating clearly with the kitchen and wider front of house team
- Handling guest requests or concerns calmly and professionally
- Assisting with pre-service preparation, briefings and closing procedures
- Helping ensure the restaurant remains beautifully presented and organised
About you
You will have substantial front of house experience within a quality restaurant, bistro, hotel or similar hospitality setting.
We are looking for someone who is:
- Naturally warm, confident and engaging with guests
- Calm, observant and organised during a busy service
- Comfortable taking responsibility and using their initiative
- Knowledgeable and genuinely enthusiastic about food and drink
- Attentive to detail without being stiff or overly formal
- Able to adapt their style to suit different guests
- Supportive of colleagues and confident setting a positive example
- Extremely reliable and available every Friday and Saturday evening
- Well presented and proud of maintaining excellent standards
Previous experience as a senior waiter, section leader, restaurant supervisor or similar would be particularly valuable. However, attitude, judgement and genuine hospitality instincts are every bit as important as job titles.

Fig. is an independent restaurant in the beautiful surroundings of Gildredge Park, Eastbourne. Every Friday and Saturday evening, we serve a seasonal tasting menu with a focus on thoughtful cooking, warm hospitality and understated service.
We are a small, ambitious team with excellent guest reviews and a growing local reputation. We care deeply about standards, but our service is never scripted or stuffy. We want guests to feel relaxed, recognised and genuinely looked after.
