The Meikleour Arms Hotel and Estate is looking for an experienced Junior Sous Chef to join our award-winning hotel and restaurant, The Meikleour Arms (AA 4* Gold).The Meikleour Arms holds several awards, including the prestigious AA “Best Accommodation 2022 for Scotland”. Established in 1820, the restaurant at The Meikleour Arms is a high-end country pub (1 Rosette), serving Franco-Scottish cuisine with a unique “Field to Fork” philosophy, using produce from our land and our own butchery. The hotel attracts a varied customer base all year long, including locals, salmon anglers, golfers, shooting parties and holiday makers. Despite its rural setting, the restaurant is a very busy place.

Benefits of the Junior Sous Chef position
- A very attractive salary package, working 4 or 5 days a week
- Salary = £43,680 per year based on 48h a week contract plus over £3000 tips per year (see below for tips).
- If you happen to work more than contracted hours, all overtime is paid £19.61/hour (£17.5 +12.07% holiday pay on overtime)
- Note about gratuities (tips): We use an HMRC-compliant tronc system, which ensures all of the hotel and restaurant’s tips go to all staff. On average, staff can expect £1.50/ hour expected tips, which combined makes this a very attractive package.
- Work mostly over 4 days a week (if 5 days a week is preferred that can be discussed at interview).
- A great opportunity to learn new skills through our sustainable “Field to Plate” philosophy. The kitchen has its own butchery on site, and our chefs work from scratch with the finest quality meat, including venison, beef and game from our land. We cure our own meat and fish, we forage, and our gardeners ensure that you have kitchen and herb gardens to pick from for most of the year.
- You will be joining a long-established Franco-Scottish family business operating in farming, property, salmon fishing and high-end tourism.
Requirements
- classic French cooking background, with meaningful experience in a high-end French brasserie-style restaurant. You must be very comfortable with classic country food.
- Not only good knowledge of game and fowl, but a genuine love of cooking “wild food”. We have our own deer stalking operation and work with local shoots.
- Very comfortable running the pass, placing orders and able to create our daily specials menu if required.
- A committed team player with a positive attitude and a good track record of staying in the same establishment for a meaningful period.
Accommodation
- Quality shared accommodation in a cottage may be available in the village if required. The cost and practical arrangements can be discussed at interview.
