Established in 2012, the Gladwin Brothers' "Local & Wild" concept has been at the forefront of London's farm-to-table restaurant scene for over a decade. The founders' rural life in West Sussex has inspired five distinct sites across London: The Shed in Notting Hill, Rabbit in Chelsea, Sussex in Soho, The Black Lamb in Wimbledon and The Pigs Ear in Chelsea. The menus offer exciting seasonal British cuisine curated around fresh and hyper-seasonal produce. Sourced from local Red Tractor-approved farmers, line-caught fish from British day-boats, foraged in hedgerows, and butchered whole from game shoots to capture the ever-changing taste of Britain today.

The Head Chef Role
The head chef controls the kitchen and its day-to-day operation, working closely with the directors (Oliver and Richard) to carry out the Local & Wild vision by following a seasonal calendar and monthly menu keys.
As a company we seek to develop staff to achieve their full potential, which you as the Head Chef will be actively involved in—forging a kitchen culture, inspiring creativity, implementing effective systems, and ensuring a healthy working environment.
The Specifics of Head chef Role
- Managing and training a team against budget
- Creating and cooking a seasonal daily changing menu
- Monitoring and achieving the budgeted food margin
- Demonstrating and presenting for the kitchen table
- Adhering and achieving 5-star food and kitchen safety
- Training and briefing front of house on dishes and seasonal changes
