We are looking for a skilled, passionate, and Qualified Butcher to join our busy, independent local shop in Elgin. You will handle whole carcasses, prepare premium cuts, and deliver exceptional service to our loyal local community. This role requires precision, creativity with value-added products, and a friendly attitude for serving customers face-to-face.Key ResponsibilitiesTechnical Butchery & Preparation
- Carcass Break Down: De-bone, trim, and portion beef, pork, lamb, and poultry.
- Value-Added Products: Craft homemade sausages, burgers, kebabs, and seasonal stir-fries.
- Stock Display: Maintain a clean, visually appealing window and counter display.
- Waste Control: Minimize waste through efficient yield management and portioning.
Customer Service & Retail
- Counter Sales: Greet customers, take orders, and provide advice on meat selection and cooking techniques.
- Order Fulfillment: Prepare specific, custom cuts for walk-ins and telephone orders.
Hygiene & Compliance
- Food Safety: Maintain strict adherence to HACCP standards and local environmental health regulations.
- Cleanliness: Keep your personal station, blocks, knives, and machinery deep-cleaned throughout the day.
- Record Keeping: Track fridge temperatures, trace records, and log batch dates accurately.
Requirements & Experience
- Qualification: Fully qualified butcher (SVQ/NVQ Level 2/3 in Food Manufacture - Butchery, or equivalent time-served trade experience).
- Knife Skills: Exceptional, fast, and safe knife work with minimal supervision.
- Location: Based in Elgin or able to reliably commute for an early morning start.
- Hygiene Certificate: Valid Elementary Food Hygiene Certificate (preferred).
- Physical Fitness: Ability to lift heavy carcasses and stand on your feet for extended periods.
