The Dukeries Lodge has recently undergone a major £1.5 million refurbishment, transforming the venue into a fantastic pub, restaurant and 17-bedroom hotel.
We’re looking for a Line Chef to join our kitchen team and help us consistently deliver great-quality food in a busy, fast-paced environment.
As a Line Chef, you’ll be an important part of the day-to-day running of the kitchen, preparing and cooking dishes to a consistently high standard while ensuring our guests receive great food within excellent service times.
You’ll need to be organised, reliable and comfortable working under pressure. During busy services, speed and consistency are essential, while quieter periods are used effectively to prepare ahead, maintain stock levels and make sure the kitchen is ready for the next service.
We also encourage our chefs to contribute ideas for specials, seasonal dishes and events, giving you the opportunity to get involved beyond the core menu.
Key Responsibilities
- Prepare and cook dishes consistently to the required specification and presentation standards.
- Maintain high standards of food quality, portion control and speed of service.
- Complete food preparation ahead of service and ensure your section is fully stocked and organised.
- Ensure stock is correctly rotated, labelled, dated and stored.
- Assist with stock ordering and stock control in line with company procedures.
- Maintain a strong working knowledge of the full menu, including ingredients and dish descriptions.
- Follow all food hygiene, allergen, health and safety and HACCP procedures.
- Complete all required kitchen due diligence and food safety paperwork accurately and on time.
- Maintain excellent standards of cleanliness throughout the kitchen.
- Ensure cleaning schedules and kitchen cleaning rotas are completed effectively.
- Maintain high standards of personal hygiene and presentation.
- Communicate effectively with the Head Chef, kitchen team and wider management team.
- Support and assist other members of the kitchen team when required.
- Help train and support less experienced members of the team.
- Contribute ideas for specials, events and menu development.
- Carry out any other reasonable duties required to support the successful running of the kitchen.
