Chef de Partie - Full Time (£14/hour, 4-Day Working Week)
KOME is looking for a passionate and motivated Chef de Partie to join our small kitchen team in Edinburgh.
We're a modern Japanese izakaya with a focus on sake, cocktails, and late-night food culture.
KOME isn't your typical Japanese restaurant. We're drink-led, food-loving, and community-minded, inspired by the energy and warmth of Japanese izakaya culture, where flavour, conviviality, and good conversation come first.
Think small plates, cocktails, big spirit selection, low lighting, music, shared bites, and after-hours crowds.
We challenge the dated Western idea of Japanese dining as overly formal or minimalist.
KOME is lively, unpretentious, and designed for people to stay late, explore sake, and enjoy well-executed, flavour-driven food.
We're proud to offer a genuine 4-day working week, with every Sunday and Monday off, plus an additional day off during the week.
We believe great hospitality starts with a team that has time to rest, recharge, and enjoy life outside of work.
Our kitchen is compact and focused, the menu is built around dishes designed to pair with sake, cocktails, and conversation.
We're looking for someone who takes pride in their craft, enjoys working in a close-knit team, and wants to be part of an independent business with room to grow.
What you'll be doing:
Preparing and executing dishes to a consistently high standard during service.
Supporting the Head Chef with daily prep, organisation, and kitchen operations.
Maintaining excellent food hygiene and cleanliness standards.
Contributing ideas for menu development and seasonal specials.
Working efficiently during busy services while remaining calm and organised.
Helping ensure the kitchen runs smoothly from prep through to close-down.
Occasionally presenting and delivering dishes directly to guests, explaining ingredients, flavours, and the inspiration behind the food.
What we're looking for:
Previous experience as a Chef de Partie or an ambitious Commis Chef ready to step up.
Good organisational skills and attention to detail.
Ability to work well under pressure in a fast-paced environment.
A genuine interest in Japanese cuisine, flavours, and hospitality.
Confident communication skills and the ability to engage warmly and professionally with guests.
A positive attitude and willingness to learn.
Reliable, hard-working, and respectful of teammates.
Someone who enjoys being part of a small independent venue where everyone contributes.
What we offer:
We're building the kind of hospitality workplace we'd want to work in ourselves, a small team, fair pay, equal tip sharing, genuine work-life balance, and opportunities for everyone to contribute beyond their job title.
£14.00 per hour.
Equal share of all card and cash tips across the team.
Full-time permanent position (45 hours per week).
Genuine 4-day working week.
Every Sunday and Monday off, plus an additional day off during the week.
No split shifts.
Ongoing training and development from an experienced Head Chef.
Opportunities to contribute to menu development and creative projects.
Sake, spirits, and drinks training.
A friendly, supportive, and collaborative working environment.
Clear opportunities for progression as KOME grows.
Christmas closure period.
Whether you're an experienced Chef de Partie or an ambitious Commis Chef ready for the next step, we'll support your development and give you the opportunity to grow alongside the business.
KOME is about pushing boundaries, serving with care, and creating a space where people feel welcomed, curious, and a little indulgent.
If you're excited about cooking flavour-driven food in a venue that feels alive, we'd love to hear from you.
Pay: £14.00 per hour
