General Role Description
The successful candidate will support the executive head chef in all aspects of the kitchen operations at Sandford Springs. This will include the hotel breakfast offering, The Fairview Restaurant, the clubhouse bar and restaurant offerings, the halfway house, all functions and events.
In addition we have recently added a new outdoor kitchen with pizza oven, so a passion and previous experience in this field would be a benefit.
Main Support Duties
1. Control and direct the food preparation and delivery at all food outlets, under the supervision of the head chef, throughout the venue
2. Lead the kitchen team by example ensuring that the same high standards are delivered regardless of which chef is on duty
4. Ensure that systems are in place to maintain the correct quantity and quality of all menu ingredients on site
5. Ensure that all kitchen equipment is in good working order
6. Manage all H&S aspects of the kitchen, maintaining a five star food hygiene rating
7. To achieve budgeted targets for both food gross profit and wage costs, without compromising standards
8. Identify opportunities to enhance the guest experience and make the necessary changes
9. Keep up to date with market trends
10. To maintain a consistently high standard in your department
11. To liaise regularly with other hotel departments, attending the weekly function meeting
12. To lead by example

Person Specification
Qualifications, experience and skills
- To have relevant managerial experience.
- Able to demonstrate high standards of customer care.
- First Aid qualification.
- Good standard of numeracy and literacy.
- A full understanding of relevant Health and Safety law
- Be able to communicate with other departments.
- Able to act on own initiative.
- Be able to develop a good rapport with all of customer
