As our Bakery Operations Manager, you’ll oversee our entire bakery function — managing production output, leading a growing team, and ensuring our standards are met every single day. You’ll play a key role in improving systems, increasing efficiency, and working with senior management to support long-term business goals.
This is not a hands-off role — we’re looking for someone who thrives in a fast-paced environment, can lead from the front, and understands what it takes to run a high-performing food production facility.
KEY RESPONSIBILITIES
- Operational Management: Manage and coordinate daily bakery operations, ensuring all products are made to spec, on time, and in full.
- Team Leadership: Lead a team of bakers and team leaders, creating clear communication, structure, and accountability across shifts.
- Quality Assurance: Uphold rigorous quality control processes across all products. Work closely with the bakers, packers and drivers to maintain consistency during growth.
- Process & System Improvement: Identify and implement improvements across production, staffing, stock management, and scheduling.
- Planning & Scheduling: Oversee production planning and forecasting in line with weekly order volumes, seasonal changes, and new product launches.
- Compliance & Safety: Maintain full compliance with food safety, hygiene, and health & safety regulations. Keep the bakery audit-ready at all times.
- Cross-functional Collaboration: Work with logistics, managers, and senior leadership to ensure smooth coordination across all departments.
- KPI Reporting: Track key operational metrics including output, yield, wastage, labour efficiency, and downtime – providing regular reporting to the senior team.
What we need
- Minimum 3–5 years' experience in a senior operations role within bakery, patisserie, or food manufacturing
- Proven track record of leading and developing production teams in a high-output environment where you have experience and approving efficiencies
- Strong understanding of bakery production methods, food safety standards, and operational compliance
- Highly organised with excellent attention to detail and problem-solving skills
- Strong leadership style – firm but fair, clear communicator, and capable of managing change
- Comfortable using production planning tools, spreadsheets, and reporting systems
- Practical, hands-on attitude – willing to be on the floor as much as needed
- Resilient, calm under pressure, and driven to consistently improve team performance and product output
