Company Overview
Osea Leisure Group is a family of award-winning hospitality businesses on the banks of the beautiful Blackwater Estuary. Our sites include Osea Leisure Park; a 5-star holiday park with its own bar and restaurant, The Deckhouse, and the Osea View Café and Vaulty Manor, one of Essex’s leading wedding and events venues, set around an 800-year-old manor house and a stunning 17th-century barn. From intimate celebrations to weddings of 200 guests, and from all-day café dining to seasonal park events, food sits at the heart of everything we do.
Job Overview
We are looking for a talented and motivated Chef de Partie to join our growing kitchen team. Working across our venues, you will take ownership of your section, producing consistently high-quality, professionally prepared dishes for weddings, private events, restaurant and café service. - Support the delivery of weddings, functions and events alongside daily restaurant and café service, adapting confidently between high-volume banqueting and à la carte cooking.
- Liaise with the Sous Chef to confirm daily menu requirements, prep lists and the working plan for the team.
- Supervise, coach and mentor Commis and Demi Chefs, helping to identify training needs and supporting new starters as they settle in.
- Assess the quality of raw, cooking and finished food by taste, smell and appearance, making corrections during cooking to guarantee the quality of every plate.
- Know the menu inside out – ingredients, allergens and cooking methods and help ensure guests’ dietary requirements and allergies are communicated and safely catered for.
- Always Maintain excellent food hygiene: keep your section and equipment clean and sanitised, complete food safety and temperature records accurately, and follow all HACCP and company procedures.
- Assist with stock control, checking deliveries, rotating stock, calculating order requirements and minimising wastage to help manage food costs.
- Contribute ideas for new dishes, seasonal menus and ways to improve how we work.
- Work safely, report any accidents or near misses, and look after the health and safety of yourself and those around you.
