We are seeking a passionate and skilled Butcher to join our new team! In this role, you will play a vital part in preparing high-quality food items, ensuring exceptional food safety standards, and delivering an outstanding dining experience. Duties
- - Prepare, cut, bone, trim and portion beef, lamb and poultry.
- - Prepare customer orders accurately and efficiently.
- - Produce steaks, chops, mince, diced meat and other required cuts.
- - Prepare burgers, sausages, kebabs and marinated products as required.
- - Keep meat displays fully stocked, clean and well presented.
- - Check product quality, freshness and dates throughout the day.
- - Rotate stock correctly and use older stock first where appropriate.
- - Minimise waste and maximise usable yield from all meat.
- - Weigh, pack, label and price products correctly.
- - Maintain organised and tidy cold-room storage.
- - Serve customers politely and professionally.
- - Advise customers on cuts and preparation where required.
- - Clean and sanitise knives, boards, surfaces and equipment after use.
- - Clean the bandsaw, mincer and other machinery according to procedure.
- - Follow all food hygiene, HACCP and cross-contamination procedures.
- - Monitor and report any food safety, temperature or product-quality issues.
- - Follow all knife, machinery and workplace safety procedures.
- - Wear the required uniform and PPE.
- - Complete allocated opening, closing and cleaning duties.
- - Report low stock, damaged equipment or maintenance issues promptly.
- - Assist with deliveries, stock movement and storage when required.
- - Follow production quantities and instructions set by the Butchery Manager.
- - Maintain a clean, safe and professional working environment at all times.
- - Carry out any other reasonable duties required for the effective operation of the butchery.
Skills
- - Strong knife skills and safe knife handling.
- - Ability to cut, bone, trim and portion beef, lamb and poultry.
- - Good knowledge of different meat cuts and their uses.
- - Carcass breakdown and meat preparation skills.
- - Ability to produce consistent, accurate portion sizes.
- - Good understanding of meat quality and freshness.
- - Ability to maximise meat yield and minimise waste.
- - Competent use of butchery equipment, including bandsaw and mincer.
- - Good food hygiene and cross-contamination awareness.
- - Understanding of temperature control and safe meat storage.
- - Good product presentation and display skills.
- - Ability to work quickly and accurately during busy periods.
- - Good customer service and communication skills.
- - Ability to understand and follow instructions and procedures.

Pay: £25,420.00-£48,500.00 per year
