Senior Sous Chef

INDIdog Eatery – Falmouth Harbour, Cornwall

Salary: £36,500–£39,000 per year (depending on experience)

We’re Looking for More Than an Excellent Chef

At INDIdog Eatery, we’re not just looking for an exceptional chef—we’re looking for an outstanding leader. We want someone who can inspire and develop a kitchen team, support our Head Chef, and help deliver one of Falmouth’s most respected dining experiences.

Situated on the edge of Falmouth Harbour, INDIdog Eatery is an award-winning independent restaurant renowned for serving exceptional food using the very best fresh Cornish seafood and locally sourced produce. We are passionate about quality, consistency and genuine hospitality, and we’re looking for a Senior Sous Chef who shares those values.

The Role

As our Senior Sous Chef, you will be the Head Chef’s second-in-command, playing a key role in the day-to-day management of our busy kitchen. This is a leadership position requiring excellent organisational skills, strong people management and a genuine passion for developing others.

You’ll help drive standards, support and mentor the kitchen brigade, and ensure every service reflects the high standards our guests expect.

You will be encouraged to contribute creative ideas for seasonal menus, specials and new dishes, making the most of Cornwall’s outstanding local produce. While your ideas and input will be highly valued, the Head Chef retains overall responsibility and final approval for all menus, recipes and plating standards.

Key Responsibilities

· Support the Head Chef with the smooth day-to-day running of the kitchen.

· Lead, motivate and develop the kitchen team through effective coaching, mentoring and training.

· Create a positive, professional and respectful working environment.

· Manage kitchen operations confidently in the Head Chef’s absence.

· Prepare and manage staff rotas to ensure efficient labour planning.

· Take responsibility for ordering, supplier relationships, stock control and stock rotation.

· Monitor food costs, GP margins and minimise waste.

· Ensure consistently high standards of food preparation, presentation and cleanliness.

· Maintain full compliance with Food Hygiene, HACCP and Health & Safety legislation.

· Assist with recruitment, inductions and performance management where required.

· Work closely with the Head Chef on menu ideas and seasonal specials using fresh local ingredients.

· Demonstrate an excellent understanding of fresh fish, seafood and Cornish produce.

· Ensure consistency in plating, portion control and service standards.

· Work collaboratively with our Front of House team to provide an outstanding guest experience.

What We’re Looking For

The successful candidate will have:

· Proven experience as a Senior Sous Chef or an accomplished Sous Chef ready to take the next step.

· Exceptional leadership and people management skills.

· Experience training, mentoring and developing chefs of all abilities.

· Confidence managing a busy kitchen and leading by example during service.

· Experience writing staff rotas and managing labour costs effectively.

· Strong ordering, stock management and supplier liaison experience.

· Excellent organisational skills with great attention to detail.

· A sound understanding of UK employment law and best practice in people management.

· Excellent knowledge of food safety, HACCP and allergen legislation.

· A passion for working with fresh fish, seafood and high-quality local produce.

· Creativity, enthusiasm and the ability to contribute menu ideas while respecting the Head Chef’s overall vision and final decision-making.

· A calm, positive attitude and the ability to perform under pressure.

· Pride in delivering consistently exceptional food and maintaining the highest kitchen standards.
