SPECIALIST VIENNOISERIE CHEF / BAKERY PRODUCTION CHEF

Location: Manchester

Salary: £42,000 per annum

Hours: 42 hours per week

We are a specialist bakery and café business focused on premium handcrafted stuffed croissants, viennoiserie products, laminated pastries and innovative bakery products.

As part of our continued growth and expansion across multiple locations, we are seeking an experienced Specialist Viennoiserie Chef / Bakery Production Chef to support our production operations and maintain the highest standards of artisan pastry production.

Key Responsibilities

Production of laminated dough products, artisan croissants and specialist viennoiserie items
Preparation and baking of premium stuffed croissants and seasonal pastry products
Managing production schedules to ensure consistency and quality across multiple locations
Monitoring dough preparation, fermentation and baking processes
Maintaining food safety, hygiene and allergen compliance standards
Supervising and training junior bakery and kitchen staff
Managing ingredient ordering, stock control and supplier coordination
Monitoring food costs, wastage controls and production efficiency
Supporting product development and menu innovation
Assisting with departmental budgeting and forecasted profit and loss management
Maintaining consistent product quality and presentation standards

Essential Skills and Experience

Minimum 3 years' experience within artisan bakery, pastry or viennoiserie production
Advanced knowledge of laminated dough production techniques
Experience producing croissants, laminated pastries and specialist baked goods within a commercial environment
Strong understanding of food hygiene and food safety procedures
Experience managing stock control and kitchen operations
Experience supervising junior staff within a production environment
Strong organisational and production planning skills
Commercial awareness and understanding of cost control principles

Desirable

Experience working within high-volume artisan bakery operations
Experience supporting multiple production sites
Experience with menu development and bakery innovation
