Full job description

Salary: £14/hour during probation, with structured review and increase following successful completion

Hours: 45–50 hours/week (lunch & dinner service, breakfast service to follow)

About Pezo's

Pezo's is a new restaurant at Potton Hall Hotel & Spa, bringing together Suffolk produce and African-inspired flavours through live-fire cooking, smoke and seasonal ingredients.

We work closely with local farmers, fishermen and producers, alongside using produce grown in our own kitchen garden. Built around a fire-led cooking style with charcoal and wood smoking, Pezo's focuses on bold flavours, quality ingredients and warm hospitality.

This is an opportunity to join an opening team and help build something exciting from the beginning.

The Role

We are looking for a reliable and passionate Sous Chef to support our Head Chef and Chef Director in the day-to-day running of the kitchen.

This is a hands-on role for someone who enjoys cooking, leading by example and helping build a strong kitchen culture. You will play an important role in maintaining consistency, supporting service and helping create an environment where the team can grow.

Our menu is already receiving positive feedback, so we are looking for someone who takes pride in consistency, organisation and delivering high standards while supporting the vision of the Head Chef and Pezo's.

Responsibilities

Support the Head Chef with daily kitchen operations
Help lead lunch and dinner services
Maintain consistency in food quality and presentation
Support food preparation and service during busy periods
Assist with stock control, ordering and minimising waste
Ensure food safety, hygiene and HACCP standards are maintained
Help train and support junior kitchen staff
Work with seasonal Suffolk produce and ingredients from our kitchen garden
Support the Head Chef in delivering and maintaining menu standards

We're Looking For Someone Who

Has previous experience as a Sous Chef or an ambitious Chef de Partie ready to step up
Works calmly and positively under pressure
Takes pride in presentation, flavour and consistency
Enjoys working with fresh ingredients and smoke-led cooking
Leads by example and supports the wider team
Is reliable, organised and hardworking
Is comfortable working evenings and weekends
Has their own transport or can reliably commute to Potton Hall, Suffolk (IP17 3EF)
