J McRobb Butchers is looking for an experienced Production Butcher to join our team. Excellent butchery skills and a thorough understanding of the trade are essential.
This position is based at our preparation unit in Charnock Richard, Chorley. From this location, we prepare and distribute products to our two retail shops in Standish and Chorley, as well as supplying a number of local restaurants.
This is a responsible production role requiring someone who is exceptionally organised, takes pride in maintaining accurate stock control and consistently follows our procedures.
Duties will include:
- Boning and processing fresh meat, including beef, lamb and pork
- Cutting and preparing orders to individual customer specifications for the restaurant trade
- Accurately picking and checking orders for our retail shops
- Receiving incoming stock and carrying out thorough goods-in checks
- Checking delivered quantities and weights against orders and delivery paperwork
- Inspecting the quality and condition of all incoming products before acceptance
- Ensuring products are correctly labelled, dated, recorded and stored immediately
- Maintaining strict stock rotation using first-in, first-out procedures
- Monitoring stock levels and reporting shortages, discrepancies or quality concerns promptly
- Curing and smoking bacon
- Producing sausages and burgers to our recipes and specifications
- Maintaining a highly organised preparation unit, chillers, freezers and storage areas
- Completing all required traceability, temperature and production records accurately
- Controlling production and keeping waste to an absolute minimum
- Working in a consistently clean, tidy and hygienic manner
Skills and experience:
- An experienced butcher with excellent cutting, boning and knife skills
- Previous experience within a busy production or wholesale butchery environment is desirable
- Exceptionally organised, methodical and attentive to detail
- A disciplined approach to stock intake, stock control and stock rotation
- Able to accurately check product quantities, weights, dates and quality
- Highly motivated, with a strong work ethic and the ability to work efficiently in a fast-paced environment
- Good knowledge of food hygiene, HACCP and traceability requirements
- Committed to maintaining the highest standards of quality, cleanliness and food safety at all times
- Reliable, responsible and committed to their work
- Able to work effectively as part of a team and independently using their own initiative
- Confident in identifying and reporting stock or quality issues
- Focused on reducing waste while maintaining product quality and specification
Applicants must have relevant butchery experience, as this is not a trainee position.
