Full job description

We are looking for an experienced and enthusiastic artisan baker with patisserie and viennoiserie experience to join our growing bakery team.

This is a hands on baking role for someone who has strong technical skills, takes pride in producing exceptional food and wants to develop their career in a growing artisan bakery.

KEY RESPONSIBILITIES

ARTISAN BREADS:

Producing high quality artisan breads consistently to our required standards.

Working confidently with sourdough and naturally fermented doughs. Including managing starters, fermentation , hydration and proving.

Produce sourdough loaves, rolls, focaccia, enriched breads and speciality/ presentation breads.

PATISSERIE AND VIENNOISERIE

Produce products such as croissants, pac, Danish pastries, tarts and cakes.

Have a good understanding of lamination, enriched doughs, pastry creams and fillings.

Have an aptitude for developing attractive, modern products that work well alongside our coffee shop and deli offering.

PRODUCT DEVELOPMENT

Working with the head baker to develop new seasonal products, breads and pastries.

Work with produce grown on our small farm and from our farm shop incorporating them into innovative products.

Contribute ideas for our special events held on site and for our wholesale range.

THE IDEAL CANDIDATE:

We are looking for someone who:

Has professional experience in artisan baking

Has strong patisserie and viennoiserie skills.

Has excellent attention to detail and takes pride in their work

Works well in a close knit small team , being able to work independently with a strong understanding of food hygiene and HACCP principles.

Is able to work early mornings, weekends and busy seasonal periods as required.

THE PERSON

Above all we seek a person who cares about the quality of the produce they create.

You should be the sort of baker who notices when a loaf isnt quite right or when a croissant hasnt laminated correctly and understands what is required to get the product right before it is sent out .

This is a job for a skilled baker / patissier who wants to be part of building something special.

Pay: £30,000.00-£35,000.00 per year
