Full job description

We are looking for a skilled and self-motivated Sushi Chef Manager to join our sushi kiosk located inside ASDA The Jewel, Edinburgh. This is a fun, light and cool environment to work in — no traditional hot kitchen, no chaos — just a clean, modern and enjoyable workspace where you can take full ownership of what you do. This is a standalone role — you will be running and managing the kitchen independently, so we need someone who is confident, reliable and able to take full control of the operation without supervision. Shift pattern: Late shifts: 2:00pm – 10:00pm. Must be available to work evenings including weekends What you'll be doing: Running the sushi kitchen independently on a day-to-day basis Preparing and presenting a full range of sushi including nigiri, maki, and specialty rolls to a consistently high standard Managing stock, ordering ingredients, minimising waste and ensuring freshness at all times Maintaining strict food hygiene and safety standards and ensuring full compliance Managing prep schedules and service periods Taking full ownership of the overall kitchen performance, quality and presentation What we're looking for: Previous experience in a sushi chef role with the ability to work independently (2–3 years) is a strong advantage, but not essential. Confidence in managing a kitchen without direct supervision. Good knowledge of Japanese ingredients, techniques and presentation Food hygiene certificate (Level 2 minimum — Level 3 preferred) Strong organisational skills and ability to manage stock and supplies Reliable, punctual, proactive and able to work late evening shifts Must be comfortable working 2pm–10pm shifts on a regular basis What we offer: £13 - £16 based on experience and performance, above market rate for the right candidate Staff meals on shift.
