Full job description

Restaurant Manager

Lead the service. Shape the experience. Make people feel special.

We are looking for a daring and driven Restaurant Manager to lead the daily operation of our award-winning restaurant at The Torridon with passion and integirty. This is a hands-on role for someone who loves exceptional service, develops great teams and takes pride in delivering memorable 5-star hospitality in a place like no other.

At 1887, every detail matters — from the welcome at the door to the knowledge at the table and the final goodbye. You will lead the front-of-house team, work closely with the kitchen, support wine and menu knowledge, and ensure every guest feels genuinely cared for. You will have personal resilience and able to rise to the challenge of running a world leading restaurant.

What you’ll do:

Lead smooth, confident and memorable restaurant service.
Coach and inspire the 1887 team to deliver at 5-star standard.
Work closely with the Head Chef and wider Food & Beverage team.
Drive guest happiness, service standards and continuous improvement.
Support productivity, stock control, sustainability and compliance.
