The Role
We are seeking an exceptional Head Pastry Chef to lead and inspire our pastry section. As a key creative force within the kitchen, you will be responsible for designing and delivering the pastry elements of our tasting menus and our celebrated afternoon tea. This is a rare opportunity to take full ownership of the pastry programme at a Michelin-starred property, with the creative freedom to shape and evolve the dessert offering.
Key Responsibilities
- Lead and manage the pastry section, maintaining the highest standards of quality and presentation.
- Design and develop innovative pastry courses for our tasting menus, in collaboration with the Head Chef.
- Create and refine the afternoon tea offering, ensuring it reflects our commitment to excellence.
- Source and champion the finest seasonal ingredients.
- Train, mentor, and develop junior pastry team members.
- Maintain rigorous standards of kitchen hygiene, food safety, and stock management.
- Contribute to menu planning and new concept development.
What We're Looking For
- Proven experience as a Pastry Chef at Michelin-starred or fine dining level.
- A strong portfolio of refined pastry work including plated desserts and patisserie.
- Experience with tasting menu formats and high-end afternoon tea service.
- Creative flair balanced with technical precision and consistency.
- Natural leadership ability and a passion for developing others.
- A collaborative approach and positive attitude within a small, dedicated team.
