Coco Tang is a unique, independent multi-concept brand that has defined the Nottingham hospitality scene since 2008. Our flagship venue is a hybrid destination: an authentic Vietnamese Kitchen, Speciality Coffee Roastery, and Oriental Bakery by day, and a sophisticated speakeasy and nightclub by night. We are obsessed with detail, authenticity, and creating an escape from the city. Now, we are bringing this same level of passion and high-energy hospitality to Manchester for our first historic phase of expansion out of Nottingham.
The Manchester Site
Our brand-new Manchester venue has a very clear "upward" energy—starting with a casual, high-traffic Vietnamese Café on the ground floor and transitioning into a more premium casual Restaurant, Private Dining, and Late-Night Bar upstairs.
The Opportunity
We are looking for a creative and exceptionally organised Bar Manager to take absolute ownership of our extensive beverage operations. Working closely with the General Manager and the brand owner, you will be the liquid architect of this landmark opening. You will build a large, high-energy bar team from scratch, managing a multi-level operation that spans daytime specialty coffee to premium, high-volume late-night craft cocktail and nightclub service.
- The Launch Liquid Lead: Oversee the middle and final stages of the bar setup, including heavy recruitment for a large brigade of bartenders and barbacks, cocktail specification training, and initial stock setup.
- Multi-Concept Liquid Mastery: Manage the drinks output across multiple service styles, ensuring the highest standards of presentation and speed.
- Stock & Margin Control: Take full accountability for high-volume wet stock management, implementing rigorous controls to minimise variance, hit GP% targets, and maintain immaculate back-of-house storage.
- Culture Builder: Hire, train, and retain an energetic, passionate team of bartenders, instilling a culture of absolute precision, speed, and exceptional guest engagement.
The Ideal Candidate
- High-Volume Bar Experience: At least 2–3 years as a Bar Manager or strong Assistant Bar Manager in a high-volume, premium cocktail bar, speakeasy, or late-night multi-concept venue.
- Financial Literacy: Highly proficient in wet-led KPIs. You know how to conduct meticulous weekly stocktakes, identify variance, negotiate with suppliers, and manage a rota to hit labor % targets.
- Operational Grit: You lead from the well, not from an office. You thrive under pressure behind the bar during peak hours, setting a relentless pace and maintaining flawless technique for your team to replicate.
- The "Detail" Architect: You possess an obsessive eye for beverage consistency. You ensure that every garnish is perfect, every pour is accurate, and the bar stations are kept immaculately clean and organized.
- A "Calm in the Chaos" Mentor: You run a structured, professional bar floor. You earn the respect of your team by being the steadiest person in the room during a high-speed shift and acts as a true mentor to junior staff.
