Sushi Chef Manager / Assistant Manager

We are seeking a skilled and experienced Sushi Chef Manager or Sushi Chef Assistant Manager to lead our culinary team. The successful candidate will be responsible for overseeing sushi food production, maintaining high standards of food safety, and ensuring exceptional service delivery.

This role offers an exciting opportunity to combine culinary expertise with team leadership within a vibrant hospitality environment. It is ideal for individuals who are passionate about Japanese cuisine, customer service, and developing high-performing teams.

Duties and Responsibilities

Supervise daily sushi food preparation, ensuring consistency and quality across all dishes
Manage and train kitchen staff in sushi techniques, food safety standards, and best practices
Oversee the organisation of kitchen operations, including inventory control and ordering supplies
Maintain high standards of cleanliness and hygiene in accordance with health regulations
Lead by example in food presentation, cooking techniques, and customer service
Coordinate with front-of-house staff to ensure seamless service delivery
Monitor food costs and optimise ingredient utilisation to minimise waste
Assist in menu development, incorporating innovative sushi options to attract customers
Ensure compliance with all relevant food safety, health and safety, and company standards

Experience and Skills

Proven supervisory experience within a professional kitchen environment, ideally specialising in sushi or Japanese cuisine
Extensive experience in food production, cooking, and food preparation techniques
Demonstrable leadership and team management skills, with the ability to motivate and develop a diverse team
Strong knowledge of Food Safety and Health & Safety regulations applicable to restaurant kitchens
Previous restaurant or hospitality experience focused on delivering high-quality food and service
Experience managing kitchen operations, including stock control, ordering, and staff scheduling
Familiarity with sushi and Japanese culinary trends is desirable but not essential

Reliable transportation for early morning shifts

You will be able to:

Prepare fresh ingredients by hand, including meat and raw fish products on each shift
Accurately label products and maintain compliance with food safety and allergen regulations
Multitask effectively in a fast-paced environment
Clean and maintain workspaces, preparation areas, and storerooms as required
Remain organised and work efficiently under pressure
Maintain a high standard of cleanliness and a safe environment for customers, clients, and colleagues
Start work early, with some shifts beginning as early as 6:00am
Learn new skills and continue developing existing ones
